Batavia Fried Chicken

Ingredients :

  • 1 kampong chicken
  • 2 stalks lemongrass
  • 3 pieces turmeric
  • 1 piece galangal root
  • 5 candle nuts
  • 10 shallots
  • 8 cloves garlic

Seasoning :

  • 1 tsb salt
  • ½ tsb sugar

Method :

  1. Cut kampong chicken into 4 even pieces
  2. Mix the spice-paste in a blender until finely ground
  3. Cook chicken with the spice-paste mixture for about 15 minutes
  4. Add seasoning and stir
  5. Remove the chicken from wok if the broth is well absorbed and almost dried and drain it
  6. Fry the chicken and serve immediately
