Batavia Fried Chicken

Ingredients :
- 1 kampong chicken
- 2 stalks lemongrass
- 3 pieces turmeric
- 1 piece galangal root
- 5 candle nuts
- 10 shallots
- 8 cloves garlic
Seasoning :
- 1 tsb salt
- ½ tsb sugar
Method :
- Cut kampong chicken into 4 even pieces
- Mix the spice-paste in a blender until finely ground
- Cook chicken with the spice-paste mixture for about 15 minutes
- Add seasoning and stir
- Remove the chicken from wok if the broth is well absorbed and almost dried and drain it
- Fry the chicken and serve immediately
